2008 Cabernet Sauvignon [2587]
Region: Hilltops
Alcohol: 14.5%
Winemaker: Rhys Eather
Philosophy: For the POSTCODE label we select fruit to make wines that clearly show their “postcode” by exhibiting true regional and varietal character.
Fruit Source: 15 year old vineyard located at Kingsvale in the Hilltops region.
Winemaking: The fruit was trucked to Pokolbin overnight and fermented in open vats. The ferment was plunged and pumped over daily and once finished, pressed and transferred into a combination of French and American oak. After 18 months the wine was lightly fined and bottled under screwcap.
Winemakers notes: Kingsvale was still experiencing drought conditions during the 2008 growing season and at vintage time in March. Locals of the Hilltops region have proclaimed 2008 the best vintage in 10 years, also producing the 2009 Jimmy Watson Trophy winner.
Tasting note: A very rich, full-bodied wine with chocolate and mocha characters on the nose and palate. The tannins are very ripe and fine leaving the palate long, plush and full.
Cellaring: Already soft and approachable, but will improve over the next 5 years.
"What I like about this wine is its immediate appeal and overall drinkability. Its youthfulness counterbalances very well with a sense of palate maturity on the other hand. Classic robust spicy plums and black fruits come through the aromas, countenanced with liquorice, aniseed and dark chocolate. Polished, delicious and pure and spicy and developing to its core roots as Cabernet, I thoroughly enjoyed drinking this red that originates from Kingsvale in the Hilltops region of South West NSW. Made by Rhys Eather of Meerea Park fame, it delivers on all levels. Try with osso buco." 91 Points - Excellent.

"When Hilltops cabernet is good, it manages to combine a sweet, fleshy ripeness with an easy-going but noticeable tannin structure. This is a good example of it. It tastes of boysenberries and mulberries, an old-spice box and tobacco. It lingers well and fills your mouth with flavour. Love the overall balance of this." 92 Points.
